Our Hojiblanca variety, also known as Intense Green Fruity , is our most popular variety and is born right on the border with the natural setting of the Sierras de la Subbética in Cordoba .
This variety, harvested in mid-October, is characterized by a high intensity and a balanced spiciness and bitterness, giving it a long and pleasant persistence on the palate, highlighting its top notes of green apple, fresh grass and bitter almond, the whole being very balanced.
Because of the early harvest, the olives are more difficult to remove from the tree and part of the harvest must be done by hand, resulting in very limited production.
Highly recommended for seasoning salads with lemon, grilled fish, meat and octopus, and of course, Caprese salad with tomatoes and mozzarella.
